Guacamole-Cheese Crisps

  • 1 cup (4 ounces) finely shredded Mexican-style Cheddar-Jack cheese with jalapeño
  • peppers
  • 1 ripe avocado, pitted, peeled, and chopped
  • 1 tablespoon lime juice
  • 1 clove garlic, finely chopped
  • 3 tablespoons sour cream
  • 3 tablespoons chunky salsa


Heat oven to 400º. Line cookie sheet with parchment paper. For each crisp, spoon 2
teaspoons cheese onto cookie sheet; pat into a 2-inch round. Bake six to eight minutes or until edges are light golden brown. Immediately transfer to wire rack. Cool five minutes or until crisp.
Mix avocado, lime juice, and garlic in small bowl; mash avocado with fork and mix together. Spoon 11/2 teaspoons avocado mixture on each cheese crisp; top with 1/2 teaspoon each sour cream and salsa.
