Pocket Lunch

Ingredients

  • 2 ounces lowfat cream cheese
  • 1 tablespoon tomato salsa
  • 3 or 4 multi-grain pita bread pockets
  • 1 avocado, sliced
  • Lime or lemon juice
  • Chicken or turkey, sliced thin
  • 3 plum tomatoes, sliced thin
  • 1 seedless cucumber, sliced thin
  • Lettuce, sliced thin
  • 6 radishes, sliced thin (optional)
  • Salt and pepper, if desired
  • Instructions


    Mix the cream cheese and salsa; spread on inside of pitas. Peel and slice the avocado; squeeze lime or lemon juice over slices to prevent darkening. Assemble the chicken or turkey, the avocado, tomato, cucumber, lettuce, and radish slices, if desired, inside the pita pockets.
