Hummingbird Cake

Ingredients

  • 1 box yellow cake mix
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 1/2 cups mashed bananas
  • 1 cup crushed pineapple
  • 1 1/2 cups chopped nuts
  • 1/2 cup raisins
  • 1 dozen maraschino cherry halves
  • 2/3 cup oil
  • 3 eggs, slightly beaten
  • Instructions


    Mix all ingredients together and beat with a mixer at low speed until blended. Bake in a well-greased and floured tube or Bundt pan at 350° for one hour. Cool for 20 minutes before removing from the pan; cool completely before serving. Garnish with cherry halves, banana slices, and pineapple chunks.
