Spinach Linguine with Fresh Sauce

Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/2 cup lemon juice
  • 1 teaspoon brown mustard
  • 2 teaspoons Kosher salt
  • 1 teaspoon black pepper
  • 1 clove garlic, crushed
  • 1 green bell pepper, seeded and chopped
  • 4 Roma tomatoes, peeled, seeded, and chopped
  • 4 green onions, chopped
  • 1 tablespoon finely chopped fresh basil
  • 1 tablespoon finely chopped fresh parsley
  • 1 package spinach linguine
  • Instructions


    Mix together olive oil, lemon juice, mustard, salt, black pepper, and garlic. Set aside while preparing the vegetables to allow flavors to blend.
    In a large bowl, combine the green bell pepper, tomatoes, green onions, basil, and parsley. Mix in the lemon-olive oil dressing and set aside at room temperature while linguine is cooking.
    Cook the linguine according to package directions; drain. Place in a large bowl or platter and top with the fresh sauce. Garnish with parsley and green onions if desired. This can be served hot or cold.
    Yield: Four servings as a main dish; six to eight servings as a side dish.
