Veggie Medley

  • 2 tablespoons canola oil
  • 1 to 2 ribs celery, chopped
  • 1/2 cup sliced fresh carrots
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 2/3 cup broccoli florets
  • 1 cup green cabbage, shredded medium
  • 1/2 cup chopped green onions, (use both white and green parts of onions)
  • 3 to 4 garlic cloves, minced
  • Onion powder (optional)
  • 2 tablespoons low-sodium soy sauce
  • Instructions

    Sauté celery, carrots, peppers, broccoli, and cabbage in oil for about six minutes. Add green onions; sauté additional three minutes. Add garlic and sauté another one minute. Do not burn garlic. Remove from heat. Season with onion powder, if desired.
    Serve over rice; sprinkle with low-sodium soy sauce.
