White Chocolate Cake

Ingredients

  • 1/4 pound white chocolate
  • 1 cup buttermilk
  • 1 1/2 cups cake flour
  • 1 teaspoon baking powder
  • 1 can flaked coconut
  • 1/2 cup butter, softened
  • 4 egg yolks
  • 2 cups sugar
  • 4 egg whites
  • 1 cup chopped nuts
  • Fudge Frosting:
  • 1/2 cup butter
  • 6 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 pound confectioner’s sugar
  • 1/2 cup cocoa
  • Instructions


    Preheat oven to 350°. Melt chocolate over hot water. Add remaining cake
    ingredients; mix well. Pour into two 9-inch round cake pans or one 9-x-13-inch pan and bake for 45 minutes.
    Combine frosting ingredients in a double boiler. Place over simmering water and blend until smooth. Remove from heat. Cool, stirring frequently until frosting reaches desired spreading consistency. Frost cake.
