Oatmeal Crisp Chicken

Ingredients

  • 1/4 cup dried cranberries
  • 1/2 cup orange juice, heated
  • 1/3 cup flour
  • 2/3 cup oatmeal
  • 1/2 cup milk
  • 5 drops hot sauce or to taste
  • 1 1/2 pounds chicken breast tenders
  • Salt and pepper to taste
  • Paprika for garnish
  • 3 pats butter divided, cut into 6 cubes each
  • Desired garnishes
  • Instructions


    Preheat oven to 400°. Spray a 7-x-11-inch or similar-size baking pan with cooking spray. Plump the dried cranberries in the orange juice. Set aside.
    Mix flour and oatmeal together. Set aside. Combine milk and hot sauce. Dip chicken, piece by piece in the milk. Drain excess. Salt and pepper chicken pieces. Coat chicken pieces with flour-oatmeal mixture.
    Arrange chicken in prepared baking pan. Sprinkle with paprika and dot with 2 pats of
    butter cubes. Bake at 400° for 15 minutes. Remove from oven and dot with remaining butter cubes. Sprinkle with cranberries and return to oven. Bake for an additional five minutes or until done.
    Yield: Six servings.
