Dried Sour Cherry Fried Pies

Ingredients

  • 1 pint dried sour cherries
  • 2 cups water
  • 1 cup sugar or equal amount of Splenda
  • 1 teaspoon almond extract
  • Crust:
  • 1 cup all-pupose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons shortening
  • Enough water to moisten the mixture
  • Instructions


    Place cherries in water and cook until tender. Drain liquid; add sugar and almond extract and stir well.
    Combine crust ingredients to form dough; roll out very thin. Cut into five or six equal-size pieces. Put 1 teaspoon of cooked cherries onto each piece of dough. Fold over and crimp edges with a fork to close the crust. Fry in a skillet of hot oil, turning to brown on both sides. Drain on paper towels.
    Yield: Five to six servings.
    Note: You can also brush the pies with butter and bake in the oven at 350° until brown.
