Stuffed Pork Loin

Ingredients

  • 1 pork loin
  • 1 box pork-flavored stuffing
  • 1/2 cup dried cranberries
  • 1/2 cup chopped dried apricots
  • 1/2 cup chopped dried apples
  • 1/2 cup apple juice
  • Fresh-ground black pepper

Instructions


Slice pork loin lengthwise in half. Place in roasting pan, open side up. Set aside.
Prepare stuffing according to package directions. Stir in dried fruit. Spread stuffing over pork and fold closed. (No need to tie.) Pour apple juice over top. Sprinkle top of the loin with fresh-ground pepper. Cover and bake at 350° until done or when a meat thermometer reads 160°.
Note: You can also use pork chops. Brown 8 pork chops (sliced 1/2-inch thick). Arrange 4 chops in bottom of baking dish, spread stuffing mix over them, and place remaining chops on top. Pour 1 cup of apple juice over all and pepper to taste. Cover and bake.
