1/2 cup orange juice
Orange Icing:
11/2 cups powdered sugar
1/8 teaspoon salt
1 tablespoon grated orange
rind
3 tablespoons soft butter
2-3 tablespoons orange juiceInstructions
Combine butter, sugar, egg yolks, and vanilla in a mixing bowl. Cream these
ingredients together thoroughly.
Mix flour, salt, and baking powder together in a separate mixing bowl. Add dry ingredients to creamed mixture 1/3 at a time, alternating with orange juice. Fold in beaten egg whites.
Fill cupcake liners 1/2 full. Bake at 350° for 15 minutes or until a toothpick inserted in center comes out clean. Cool cupcakes completely.
Mix all icing ingredients together, starting with 2 tablespoons orange juice. If frosting is too thick, add additional orange juice. Frost each cupcake.
