Roasted Garlic and Bread

Ingredients

  • 1 loaf French bread
  • 1 bulb fresh garlic
  • Extra virgin olive oil (about
  • 1/2 cup, more or less)
  • 4 tablespoons freshly grated Parmesan cheese (or to taste)

Instructions


Preheat oven to 250°. Slice off just enough of the top of the garlic bulb to expose the cloves. Put garlic in a baking dish and drizzle with extra virgin olive oil. Place in oven and bake for 50 minutes.
Remove from oven and cool until it can be handled. Heat French bread in the oven. Squeeze the roasted garlic cloves out of the skin onto a plate. With a fork, mash the garlic until thoroughly minced. Drizzle with olive oil and continue mashing until it is completely incorporated into the oil. Stir in Parmesan cheese.
Remove warm bread from oven. Slice bread and dip in garlic mixture.
