Peanut Butter Popcorn

Ingredients

  • 3 quarts popcorn, popped
  • 1 1/2 cups dry roasted peanuts or mixed nuts
  • 1 cup sugar
  • 1/2 cup honey
  • 1/2 cup light corn syrup
  • 1 cup peanut butter
  • 1 teaspoon vanilla

Instructions


In a large roasting pan, combine popcorn and nuts and keep warm in a 250° F oven.
Butter sides of a heavy 1 1/2-quart saucepan.

Combine sugar, honey, and corn syrup in pan. Bring mixture to a boil, stirring constantly. Boil hard for two minutes.

Remove from heat. Stir in peanut butter and vanilla. Immediately pour over popcorn mixture, stirring to coat well. Cool and break into bite-size pieces.
Yield: Three quarts.
