Pot Roast Meatloaf

Ingredients

  • 1 pound lean ground beef
  • 2/3 cup evaporated milk
  • ½ cup fine dry bread crumbs
  • ½ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 3 medium potatoes
  • 3 medium onions
  • 3 medium carrots
  • 2 teaspoons dried parsley flakes
  • 1 teaspoon salt
  • Dash of pepper
  • Instructions


    Mix ground beef, milk, bread crumbs, ketchup, Worcestershire sauce, 1 teaspoon salt, and ¼ teaspoon pepper. Shape into a loaf in the center of a greased pan.
    Peel and chop the vegetables and place around the meat. Mix parsley, 1 teaspoon salt, and dash of pepper. Sprinkle over vegetables. Cover the pan tightly with foil. Bake at 375° for one hour or until the vegetables are tender. Uncover and drain off excess grease. Bake 10 minutes to brown.
