Raisin Cream Pie

Ingredients

  • ¼ cup raisins
  • 3 tablespoons water
  • 3 cups milk, divided
  • ¼ cup white sugar
  • ½ cup brown sugar
  • 5 tablespoons cornstarch
  • 2 cups whipping cream
  • 1 tablespoon lemon juice
  • 2 large eggs
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
  • 1 tablespoon butter
  • ½ teaspoon cinnamon
  • 1 (9-inch) pie shell, baked
  • Whipped topping
  • Instructions


    Cook raisins with water for five minutes; cool. Heat 2½ cups milk and sugars. Blend eggs, salt, cornstarch, and remaining ½ cup milk in blender. Slowly stir into hot milk with a wire whisk. Stir constantly until thick; do not allow to boil.
    Remove from heat; add vanilla, butter, cinnamon, and raisins with water. Cool. Spread into pie shell and cover with whipped topping.
