Hot and Sour Soup

Ingredients

  • 1 pound pork (roast or ribs)
  • 10 chicken bouillon cubes
  • 1 (6- to 8-ounce) can kraut juice
  • 1 (10-ounce) can kraut
  • 1 can bamboo shoots
  • 1 tablespoon soy sauce
  • 2 tablespoons white vinegar
  • 1½ teaspoons white pepper
  • 1 or 2 bunches green onions, chopped
  • Dumplings:
  • 1 cup plain flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup milk
  • Instructions


    Boil pork in water until tender. Remove from water, cool, and pull off meat into bite-size pieces. Strain broth and add water to make two quarts liquid. Add meat, bouillon cubes, kraut juice, kraut, bamboo shoots, soy sauce, and vinegar. Boil until bouillon dissolves.
    Mix all dumpling ingredients thoroughly, but gently. Drop by small teaspoonfuls into
    boiling soup. Cook for 10 to 15 minutes undisturbed. Just before serving, add white pepper and green onions. Serve when onions are hot.
